Producer Overview:

Opi d’Aqui is the project of Alain Coumont (proprietor of Le Pain Quotidien) and Winemaker Philippe Formentin, who has consulted at vineyards all over the world, including California, Corsica, Russia, and India. Located in the Larzac foothills in southern France, this new venture began with Philippe’s first cuvee in 2011. Philippe & Alain strive to create the most natural expression of the grapes by utilizing organic and biodynamic principles in the vineyard, employing spontaneous fermentation, eliminating the use of sulfites, and bottling the wine unfiltered.
