Clare Wine Co was established in 2008 by the owners of Kaesler Wines, Barossa Valley. Winemakers from Kaesler, Stephen Dew and Reid Bosward are responsible for producing the wines under the Clare Wine Co brand. Fruit is picked and transported to Kaesler winery in the Barossa for vinification. Varieties focussed on are Riesling, Shiraz and Cabernet Sauvignon. The vineyards were carefully selected due to their unique soil formations and the micro climates found in the respective vineyards. Riesling excels in Watervale and the Shiraz and Cabernet from Polish Hill represent some of the finest fruit found in the region. The oldest vines are 43 years old
This Riesling was harvested on the 7th of February in the early hours of the morning. Crushed very cold and lightly bag pressed, it was then left to sit to let the heavy solids settle before starting the ferment. After 14 days of fermentation the wine was racked and kept cold before filtration and bottling. Pale straw color with fresh citrus and white nectarine and slight floral notes. On the palate, candied green apples with tangy acid and a balanced, structured palate for longevity.
